Ingredients (use vegan versions):
- 1 1/2 to 2 cups veggie broth or onion soup powder reconstituted
- handful elbow pasta
- 3 or 4 stalks kale or other greens chopped
- tamari to taste
Boil broth or soup. Add pasta and kale. If using whole wheat pasta, boiling the pasta a few minutes before adding kale works best. Cook until pasta is done and season to taste with tamari. Cool and serve.
It is not the most traditional (U.S.) breakfast but it works well enough and is a nice change from sweet breakfasts.
