Ingredients (use vegan versions):
- tortilla shells (one tortilla for each person)
- refried beans
- oil for frying
Put about 1/2 cup of oil in frying pan and heat. When you drop water in the pan and it sizzles it is ready. Carefully place one tortilla in the oil and use tongs to flip sides. Keep flipping sides until both are brown. Place fried tortilla shell on a plate with paper towels to soak up the oil.
While frying the tortillas cook the refried beans in the microwave for a few minutes (or stovetop).
Once beans and tortillas are done put fried tortilla on a plate, spread refried beans over tortilla, top with lettuce and salsa. Not the healthiest treat, but it satisfies those cravings for fried foods.
