Apple Raisin Stuffing



Ingredients (use vegan versions):
  • 1/3 cup minced onion
  • 3/4 cup chopped celery
  • 1/4 cup oil
  • 4 cups soft vegan bread cubes (I use whole wheat bread)
  • 1 1/2 cups chopped apple
  • 1/3 cup raisins
  • 1 cup vegetable broth
  • salt and pepper to taste
Directions:

In large skillet, heat oil then add onion and celery. Cook until tender about 5-7 minutes. Pour into a casserole and add vegan bread cubes. Add remaining ingredients and toss making sure all the bread in soaked in broth. Bake in oven about 45 minutes at 350 degrees.

Serves: 6 to 8

Preparation time: about an hour
