Avocado and Mixed Greens Sandwich



Ingredients (use vegan versions):
  • 1 cup of mixed greens
  • 1/2 avocado, sliced
  • 2 slices of tomato
  • vegan bacon bits
  • vegan bread (wrap, pita, or baguette)
  • For dressing:
  • 1 teaspoon cider vinegar
  • 1 tbsp olive oil
  • salt and pepper (to taste)
  • pinch of vegan sugar
Directions:

Arrange the greens, tomato, and avocado on your choice of bread and top with the vegan bacon bits (as little or as much as you like....I like a lot!)

In a small bowl mix the ingredients for the dressing and pour over sandwich filling. It's as easy as that, and it's really tasty too!
